Travelling and Food / Oatmeal cookies / Healthy diner
Last month I was working and traveled around Holland to visit 137 companies. I was driving in the car a lot. But how can you eat healthy in between?
Here I have some good advise:
- In the morning I make a smoothie as breakfast: oatmeal, coconut rice meal, fresh orange juice, banana, strawberry, coconut flakes, proteïne powder and shake it in the blender! You can drink this in the car.
- Bring mini cucumbers & mini tomatoes with you
- Make in the evening a big couscous salad with feta cheese, cucumber and tomatoes. You can leave it in the fridge and take it with you the next day.
- Celery with peanut butter
- I have always a banana with me
- Almonds or other nuts (not salty)
- Rice cakes with peanut butter
- Olives
- Carrots
- Dates
- Fruit
- Whole weat cracker
Homemade Oatmeal Cookies
Ingredients for about 16 Oatmeal cookies:
- 100 grams of oatmeal
- 2 bananas
- 35 grams of nuts (I used a mix of walnuts and almonds)
- 20 grams coconut
- 1 tablespoon honey
- Pinch of cinnamon
- 30 grams of raisins
Preparation:
- Preheat oven to 180 degrees.
- Put the bananas together with the nuts in a food processor and process briefly fine. Make sure it is not too fine.
- Put the bananas, nuts, oatmeal, coconut, honey and raisins together. (Not in the food processor.)
- Use your spoon to make 16 round cookies on the baking paper. Press them with the back of the spoon.
- Put the cookies in the preheated oven for about 20 minutes. Let is cool down for a bit & your healthy cookies are ready!
I used walnuts and almonds, but you can vary in so many ways!
Think about chocolate, pumpkin seeds and all kinds of nuts.

* Whole grain crackers with cottage cheese, cucumber, tomato, pepper & pine nuts
* Green tea
* Banana

I try to make a healthy diner every day of the week
Candle lights on and enjoy the nice warm place at home.
Talk with your husband, boyfriend or friend about the day and enjoy your food. Everybody can make 30 minutes per day for that!
